Default Blue Cheese used to make me gag. Now I LOVE it! What happened?

In HS I worked part time in a deli. Every worker my age use to hold their breath whenever cutting a hunk of blue cheese for a customer. Now I can’t eat enough of it, the stronger the better. What happened? Is this change of taste physical or psychological?

taste buds can change..especially from certain medications ..the most common compliant from Coumadin can be taste buds affected

Dysgeusia is the medical term

Some foods, like olives and blue cheese, are an acquired taste. I think. Most children don'r like certain things that later they may come to like.

I think our taste buds just get old and less sensitive. I eat foods now that I could not tolerate as a child or young adult. I no longer taste the horrible flavors that I used to detest. Same with heat. Peppers and other hot foods just don't seem as hot anymore. I blame it on age.

Never liked Bleu cheese and still don't and I've never liked beets either.
There's a similar musty taste they both have and . . . ugh.
The thought of either of them . . . well, you really don't want to hear more.

I could not stand the smell of Brussels Sprouts. Then, I was watching a cooking show to prepare them in the microwave oven and add in some lemon and bacon. No sulfur smell at all plus the tang of lemon (homegrown, of course) and the smoky crunch of bacon has transformed this to be the hit of dinners.

My husband didn't like cilantro at all when it first became trendy. A year later he started liking it.

Beets and lima beans made me gag as a child and still do. Our beagle under the dinner table didn't like them either.
