Ahhh... but is it dried salt cod? I've seen the salt cod that must be refrigerated in Publix too.

Yes they're both dried. Salt cod, by definition, is dried. That's why it's salt cod. It's part of the process of drying it. Not "salted" cod, but "salt cod." They both have to be re-hydrated in order to be edible.

My bad. I've seen the sealed bags of Salted Cod Fillets in the fridge at Publix and assumed that they contained enough moisture that they required refrigeration. I am not used to seeing the dried salt cod kept cold. I should have paid more attention in chemistry... or was it biology.

Yeah that's the same stuff they sell at Walmart. I'm guessing they keep it refrigerated for sanitation purposes. That stuff stinks to high heaven if it's left out. Used to see it at an East-West Asian market back north, but it wasn't even contained, it was just in a bin near the counter.
