U.S. 441 Unit 608, Summerfield Routine Inspection on Dec. 16 Follow-Up Inspection Required: Violations require further review, but are not an immediate threat to the public. 18 total violations, with 5 high-priority violations High Priority - Cooked poultry not reaching a minimum internal temperature of 165 degrees Fahrenheit. Male employee at the cook line plated chicken at 145F, inspector instructed to moved back to grilled and cook to 165F. **Corrected On-Site** High Priority - Employee touched bare body part and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Male employee using Single-use gloves not changed as needed after touching face and glasses, Inspector instructed to removed gloves and wash his hands. **Corrective Action Taken** High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. In walk-in cooler, raw shell eggs stored above sauce containers, Manager moved. **Corrected On-Site** High Priority - Shell eggs in use or stored with cracks or broken shells. See stop sale. In walk-in cooler, cracked egg, also tray with broken shells. Manager discarded. High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Reach-in cooler at the server station, cut lettuce 46F, Manager moved to another cooler. pasta for soup on ice bath 48-50F (Manager will use time as a public health control. Also in walk-in cooler house sauce 47F and soup 48F, Manager moved to freezer. **Repeat Violation** **Admin Complaint** |

Given the nature of what is considered a High Priority violation, I am comfortable eating at any restaurant which is allowed to remain open.
I can't tell you how many times I have touched a bare body part then continued with food preparation in my own kitchen... yet I have survived to write about it. I am absolutely sure that in my refrigerator right now there are raw food products stored above ready-to-eat products. I am no longer surprised to find an egg with a cracked shell in the carton from my refrigerator. That these are tagged as high priority violations, corrected, and revisited makes me very comfortable that more serious violations which may be immediate threats to the public are not present.

Why do people insist on making claims without looking them up first, do they really think no one will check? Proof by emphatic assertion rarely works. I’ve never been to this restaurant, but after reading all of the reviews and looking at the pictures, I am definitely going to go this weekend!

We eat here frequently and will continue to do so. Pretty evident many nay Sayers have never been in a commercial kitchen. Yes, sanitation issues are very important. But an inspector can find an issue in every restaurant they walk into. They also close them if the issues are not immediately corrected or are so bad.
Most restaurants are cleaner and more sanitary than your home. Don't eat out if your so concerned. |

Inspections weren’t this crazy back when I grew up. How did we all live? He touched the food & didn’t change his gloves? They did not wear gloves back then .
Restaurants actually get written up because there’s a cockroach. This is Florida kiddos. There’s always cockroaches. I’d rather have a couple cockroaches than spraying pesticide everywhere. I dealt with enough stupid EPA regulations when I owned a dry cleaners. I had inspectors who came in and didn’t even know where the dry cleaning machine was. I would never own a restaurant. |

Years ago I knew the inspector in my home town. It was said when he ate in a restaurant, he'd hold up the water glass and if it had marks he'd report it. Wonder if he did the same with the eating utensils??!! In some instances though, I can see why they'd get demarits for not adhering to good health practices.

If they closed down every restaurant that has been cited in past few years, there wouldn't be many left open. We think Francesco's is one of the better places to eat here. And please don't compare it to some place you loved back up North.

We have eaten here many times in the past and I have nothing but good to say about it. Good food, good service and good prices. I am not concerned about the safety issues found from the inspection and would not hesitate to eat there again.

Hey! If a place is so bad that even the roaches won't eat there, it's time to cross it of my list. In other words, good food isn't necessarily sterile. I've eaten street and wild food around the world and enjoyed every bite ... except for Brussel sprouts.

Why? Have the health department come to your home and look in your fridge, inspect your home stove, your grill and you’ll probably never eat in your home again.
